“I walked into Ember & Salt expecting another farm-to-table sermon. What I got instead was a wood-fired education. Chef Cole's restraint is her weapon — she lets the Josper do the talking, and it speaks fluent char. The lamb shoulder, kissed by cherry wood smoke, arrived with a crust that crackled like a campfire confession. Is it perfect? No. The dessert program needs work, and someone should tell the sommelier that not every pour needs a backstory. But when that grill is singing? You shut up and listen. Three stars, and I mean every one of them.”
